Ingredients required:
1. Pearl millet Flour 150 grm
2. Butter (cold) 70 grm
3. Pink Salt A pinc
4. Baking powder ½ tsp
5. Broccoli Rabe A bunch
6. Ricotta 70 grm
7. Walnuts 25 grm
8. Tofu 50 grm
9. Pepper powder A pinch
10. Cream 35 ml
11. Olive oil 25 ml

Method: –
Step-1. Pre heat the oven at 180 C and grease the quiche mould with butter or oil.

Step -2. In a mixing bowl, millet flour and salt all together. Add the cubes of cold butter and rub with fingertips until the mixture resembles bread crumbs. In a small bowl, whisk 1 tablespoon oil, 2 tablespoons cold water and 1/2 teaspoon baking powder till well incorporated. Add this wet mixture to dry mixture and combine well to form dough. It must be firm dough. Chill the dough by wrapping in a cling film for at least 30 minutes. After 30 minutes, roll it out to and put it in the quiche mould. Press with fingers gently to ensure that the dough evenly covers the mould. Prick the base of the dough with a fork and bake at 180 degree C for 8-10 minutes.

Step- 3. Blanch the broccoli Rabe and sauté it and keep a side. Take a mixing bowl and add ricotta cheese, tofu, cream and walnuts together, add salt and black pepper powder. Add the mixture with sautéed broccoli Rabe. Fill the tart with the mixture and put it again in the oven for 5-7 minutes.

Step- 4. Take the tart out of the oven and serve hot with jasmine tea or another beverage which you like.

This cruciferous green is related to turnips and mustard greens, and not, perhaps surprisingly, to its familiar namesake. With long stems, small, broccoli-like flower heads and jagged, turnip-like leaves, broccoli Rabe is peppery and slightly bitter. Broccoli Rabe is higher in folate than both mustard greens and turnips and, like kale, is a source of vitamins A, C and K42. Common in Italy, Portugal, Poland and Ukraine, broccoli Rabe – or Italian broccoli as it’s also known – is easy to grow and can be harvested within seven to eight weeks of planting. The young, immature flower heads are the most commonly eaten in parts; sometimes the flower heads are slightly sprouted and purple in colour. Boil or sauté it with garlic and chilli. All parts of broccoli Rabe are delicious paired with grains, nuts and other vegetables.

Pearl millet or bajra as it is called locally is a very nutritious cereal that was once grown widely by the Bhil Adivasis in western Madhya Pradesh during the monsoons. Pearl millet is gaining importance as a climate-resilient and health-promoting nutritious crop. Recent evidences using microsatellites suggest the monophyletic origin of pearl millet and its further migration and secondary diversification leading to enormous diversity. The grain is rich in minerals and high in fibre content and tends to digest slowly as a result it is a super grain for people who have diabetes or who want to lose weight. It helps to reduce the cholesterol and helps in digestion; however this grain should be avoided during summers as it can lead to digestive problems
